This is an easy authentic Chinese lemon chicken just like you would find in a Chinese restaurant. I have recently changed the batter for this recipe. I tested many variations and found this one to be the best. It is light and crispy and covers the meat or seafood much better. The lemon sauce now has a much more intense lemon flavour, it also is easier to make.
