This easy 7 can taco soup with ranch dressing mix is a recipe that was given to me by a coworker many years ago. I remember we had a potluck in the teacher’s lounge. We all raved about her recipe. Afterward, our teacher friend was kind enough to offer to make us all copies of the recipe. Today, I have that piece of paper for this beef taco soup saved in my recipe binder. It is so hearty, easy, and tasty that it is worth sharing here.
Really, the great thing about this recipe is that it can be made as aslow cookertaco soup or as an easy stovetop taco soup. This recipe is what some refer to as a dump recipe. You know what I mean – the kind where you open up a bunch of cans and dump them in. That’s a great description for this one, alright!
Flexibility
Luckily, this is one of those flexible recipes that can handle different meats. You can make this a chicken taco soup by simply using 2 cups of chopped cooked chicken breasts. Or you can make it a beef taco soup (like I typically do) by using cooked ground beef. I often prepare and freeze ground beef ahead of time to use in recipes. Therefore, this is truly a dump and go recipe for me! Sometimes life really can be that easy!
Additionally, you can make this 7 can taco soup with pinto beans and kidney beans exactly as I have detailed in the recipe card. Or you can make it into a taco soup with black beans by simply switching the cans of beans. If you prefer all kidney beans, you can go that route, too.
I’ve also varied which diced tomatoes I’ve used. I’ve used all types – Rotel with lime, plain diced tomatoes with no added flavorings. And the last few times, I tried “salsa style” fire-roasted tomatoes in a bit of puree (and omitted the tomato sauce altogether…making it more of a 6 can taco soup) that I really enjoy in this soup.
Making 7 Can Taco Soup with Ranch for Slow Cooker
Follow the ingredient list below and all instructions, except you will combine all ingredients in a slow cooker rather than in a pot. Then, turn on low for about six hours, and dinner is ready!

What to Serve with 7 Can Taco Soup
I usually serve my beef taco soup with Fritos. It also goes really well with my sweet corn muffins. Typically, I don’t make an extra side item when we have soup. It is usually just the soup and the Fritos, tortilla chips, or muffins. Whichever one I happen to have easily available is what it will be.

Ingredients
- 1 lb Ground beef lean
- 1/2 Onion chopped
- 1 can Pinto beans *drained, 16 oz
- 1 can Light red kidney beans drained, 16 oz
- 1 can Dark red kidney beans drained, 16 oz
- 1 can Whole kernel corn drained, 16 oz
- 1 can Stewed tomatoes undrained, 16 oz
- 1 can Diced tomatoes with green chiles undrained, 16 oz
- 1 can Tomato sauce 8 oz
- 1 package Taco seasoning
- 1 package Ranch dressing mix
- 2 cups Water
Instructions
In a large soup pot, cook meat and onions until browned.
Drain the meat and return to the pot.
Make sure all beans and corn are thoroughly drained and add all ingredients to the pot.
Cover pot and simmer for about one hour.
Garnish with shredded cheese, sour cream, black olives, and cilantro. Serve with Fritos, tortilla chips, or corn muffins.

*any of the beans can be interchanged with black beans

I substitute 2 can of chicken broth and only use corn and black beans (my family doesn’t like kidney beans), can of diced tomatoes and generic rotel. Yummy!The Gifted Gabber
